RECIPIES
Mango cream
Ingredients: 1 tablespoon unflavoured gelatin, 2 cups of mango puree, 1 table spoon of lime juice, 1 cup of heavy cream.
Sprinkle gelatin on 1/3 cup of water, then dissolve stirring over a low heat. Cool it. Mix mango puree, sugar, lime juice, and gelatin. Whip cream until stiff, then fold lightly but thoroughly into mango mixture. Pour into mold rinsed with cold water. Refrigerate. Unmold, serve plain with slices of mango.
Mango fool
Ingredients: 3 cups of mango puree sieved, 1 table spoon lime juice, ½ sugar, 3 cups stiffly whipped cream chilled.
